ECONOMY FRUIT CAKE 
1 pkg. mincemeat
1/2 c. water
1 can Eagle Brand milk
1 egg
3/4 c. flour
1/2 tsp. baking soda
1-2 c. chopped nuts
1 pkg. candied fruit
1 pkg. dates; optional
Coconut; optional

Cook mincemeat in water about 1 minute or until thick. Cool, then add milk and egg. Mix well; set aside.

Then mix flour, soda, nuts, fruit, dates, and coconut. Add to first mixture. Pour into greased tube pan (I use Pam). Flour if NOT using Pam. Bake 1 1/2 hours at 350 degrees or until done.

GLAZE: Bring to boil quickly 1/2 cup corn syrup and 1/2 teaspoon cornstarch (or flour). Remove from fire. Brush over cake. Add fruits and nuts for decoration.
