RICK'S PEANUT BUTTER COOKIES 
1/2 c. butter
1/2 c. peanut butter
1/2 c. granulated sugar
1/2 c. brown sugar
1 egg
1/2 tsp. vanilla
1 1/4 c. sifted all-purpose flour
3/4 tsp. baking soda
1/4 tsp. salt

Thoroughly cream together the butter, peanut butter, sugars, eggs and vanilla. Sift together the dry ingredients. Blend into creamed mixture. Shape into 1 inch balls. Roll in granulated sugar.

Place 2 inches apart on ungreased cookie sheet. Press a criss cross with a fork onto each cookie. Bake at 375 degrees for 10-12 minutes. Cool slightly. Remove from cookie sheet. Rick bakes them the best! Makes 4 dozen.
