CHEESE CAKE 
1 lb. cream cheese at room temperature
3 eggs
1/2 c. sugar
1 tsp. lemon juice
1 tsp. vanilla
Graham cracker crumbs or oat bran

Beat cream cheese and sugar together, add eggs which have been beaten together. Add lemon juice and vanilla. Beat all together.

Prepare 8 inch round pan with a 1/3 inch layer of graham cracker crumbs (or oat bran). Pour batter into pan.

Bake in 325 degree oven for 30 minutes or until center is set. Turn oven off and leave cake in it to cool. If center is still too soft, bake a few minutes longer.
