PARTY MERINGUES 
1 (3 oz.) pkg. gelatin (any flavor)
1 c. sugar
1/4 tsp. salt
2/3 c. egg whites
1/4 tsp. almond extract

Preheat oven to 350 degrees. Grease cookie sheets with butter; dust with flour and set aside. Combine egg whites with salt in metal or glass mixing bowl and beat until frothy. Gradually add sugar and gelatin powder; beat until mixture is glossy and stands in peaks. Fold in extract.

Drop by heaping teaspoons 1 inch apart on cookie sheets. Put sheets in oven and turn off heat. Let stand in oven for 3-4 hours. Store in airtight container. Makes 4-5 dozen.

Variation: Chocolate-Nut Kisses (Willie Miesner) - Omit gelatin. Fold in 1 cup finely chopped nuts and 1 cup mini semi-sweet chocolate chips.
