PAUL'S BACON AND POTATO PIE 
1 lb. bacon, cut into 1 inch pieces
8 eggs, whisked until foamy
1/2 lb. sharp Cheddar cheese, coarsely grated
1 med. onion, chopped
1/2 tsp. freshly ground pepper
1 lb. potatoes, peeled

In a frying pan, brown the bacon until crisp. Drain and blot on paper towels. Combine with all ingredients but potatoes and set aside. Coarsely grate potatoes into a bowl of cold water.

Transfer to colander; rinse and drain well. Remove excess moisture by lightly pressing potatoes against sides of colander with wooden spoon. Combine with bacon, cheese mixture and pour into a greased 9 x 13 inch baking dish, spreading mixture evenly.

Bake at 350 degrees for 45 minutes. To serve, cut into squares. Serves 8 to 10.
