POTATO-LIMA BACON PATTIES 
2 slices bacon, cooked crisp
1 egg, beaten
1/3 c. lima beans, cooked
1 med. potato, cooked
1/4 tsp. instant onion
Salt & pepper to taste
1/3 c. tomato juice
Grated cheese (optional)
Toast

Mash potato and lima beans together. Crumble bacon and add to beaten egg, together with the onion and salt and pepper. Form into patties and cook in bacon drippings until crisp on both sides. Place patties on a piece of toast. Remove liquid drippings from pan and heat tomato juice in pan, scraping and stirring. Add cheese to patties if using, and pour over hot tomato juice.
