CHEESE AND BACON POTATOES 
6 slices bacon
4 lg. potatoes, sliced thin with skins on
1 (4 oz.) can chopped green chilies (optional)
1/4 c. onion, chopped fine (optional)
1 1/2 c. (6 oz.) shredded Cheddar cheese

In electric skillet - place bacon in cold skillet. Turn temperature dial to 325 degrees. Fry bacon until crisp. Remove and drain. Reserve approximately 2 tablespoons of bacon grease in skillet. Add potatoes and cover - cook approximately 10 minutes. Turn potatoes over and cook another 5 minutes. Crumble bacon and combine with green chilies and onions. Sprinkle over potatoes. Top with cheese. Cover and cook 5 minutes. Serve. Makes 4-6 servings. Chilies and onions are optional. When using - use both or neither.
