RAISIN FILLED COOKIES 
2 c. brown sugar
1 c. butter or vegetable shortening
3 eggs
4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla

Cream together brown sugar, butter or shortening and eggs. Add remaining ingredients. Makes very thick dough. Roll in shape of rolling pin, put in wax paper and chill in refrigerator 3 to 4 hours or better overnight.

Cut in thin slices, fill with either of the following fillings and place 1 slice over another piece around edges.

FILLING:

2 1/2 c. chopped dates
1 c. sugar
1 c. chopped nuts
1 c. water

RAISIN FILLING:

2 c. raisins
1 tsp. lemon juice
1 c. sugar
2 c. water

Thicken with 2 tablespoons flour (mixed with 1/4 cup water until smooth. Bake about 10 minutes at 350 degrees, or until lightly browned.
