JOSH'S RAISIN FILLED COOKIES 
3/4 c. shortening (part butter)
1 c. sugar
2 eggs
1/2 tsp. lemon flavoring
2 1/2 c. flour
1 tsp. baking powder
1 tsp. salt

Mix shortening, sugar, eggs and flavoring thoroughly. Measure flour, sift together with baking powder, and salt, blend in. Chill 1 hour.

FILLING:

1/2 c. boiling water
1/3 c. sugar
1 c. raisins
1/2 tsp. flour

Add raisins, sugar and flour to boiling water. Cook until thick. Set aside.

Heat oven to 400 degrees. Roll dough 1/8 inch thick on lightly floured board. Cut in circles. Place 1 circle on ungreased baking sheet, top with filling and another circle. Bake 6 to 8 minutes, until golden.
