EDITH'S CHOCOLATE CAKE 
2 1/2 c. cake flour
1 tsp. baking soda
1/2 tsp. salt
1/2 lb. butter
2 c. sugar
5 lg. eggs
3 sq. unsweetened chocolate
1 c. buttermilk
2 tsp. vanilla extract

All ingredients need to be at room temperature. Cream sugar and butter. Add eggs one at a time. Melt chocolate and add when partially cool. Add vanilla. Mix soda with cake flour; add flour and milk alternately, beginning and ending with flour. Bake at 325 degrees for 35-45 minutes or until done. Makes one sheet cake 9 x 13 inch or two large 9 inch square layers.

This cake is good with powdered sugar on top. However, if you must have frosting, mix in small bowl 1/2 stick butter, 1 teaspoon vanilla extract, and 1 egg white. Add cocoa and powdered sugar until you get the consistency desired. Start with 1/3 cup cocoa and 1/2 box sugar. Make as dark with chocolate as you desire. Beat at high speed. The frosting should be light and creamy.
