CORIANDER RICE PUDDING 
4 c. milk
1/4 c. sugar
1/4 c. uncooked rice
1/4 tsp. salt
1 tsp. ground coriander seed

Scald milk. Add all other ingredients to milk in a 2 quart casserole. Stir well. Bake at 325 degrees for 2 hours or until rice softens and milk thickens. Stir every 20 minutes. If desired, add raisins. Serves 4-6.
