CORIANDER CHUTNEY 
2 lb. cooking apples
1 lb. onions
2 cloves garlic
1 green pepper
1 red pepper
3 3/4 c. red wine vinegar
2 2/3 c. brown sugar
1/2 tbsp. whole coriander
6 peppercorns
6 allspice berries
1 tbsp. sea salt
2 oz. ginger root
2 tbsp. chopped coriander leaves
2 tbsp. chopped mint

Peel, corn and slice the apples. Peel and chop the onions. Peel and crush the garlic. Remove the seeds and stalks from the green and red peppers and chop. Put all these ingredients in a broad heavy saucepan, add the vinegar and bring to a boil. Simmer for about 30 minutes, until soft.
