FRESH APPLE CAKE 
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 eggs, beaten
1 1/2 c. oil
2 tsp. vanilla
1 c. pecans, chopped
3 c. apples, diced

Stir flour, sugar, soda, cinnamon and salt. Add in eggs, oil, vanilla, pecans and apples. Mix well, but do not beat.

Bake in a Bundt pan for 1 hour at 350°F. Cool in pan before removing.
