FRESH APPLE CAKE 
3 c. sugar
3 eggs
1/2 c. oil
1 tsp. vanilla
2 c. self-rising flour
1 tsp. cinnamon
1 tsp. nutmeg
3 c. apples, diced
1 c. nuts, chopped

Combine sugar, eggs, oil and vanilla. In another bowl mix flour, cinnamon and nutmeg. Add to sugar mixture. Fold in apples and nuts. Pour into greased and floured Bundt pan.

Bake at 350°F for 40-50 minutes.
