NO-CHOLESTEROL APPLE CAKE 
2/3 c. sugar
1/2 c. packed brown sugar
1/4 c. vegetable oil
3 egg whites
2/3 c. all-purpose flour
2/3 c. whole wheat flour
1/2 c. oat bran
1 1/2 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. allspice or nutmeg
3 c. shredded unpeeled apples
Powdered sugar

Spray 9x13x2 inch baking pan with non-stick coating; set aside. In a large mixing bowl, combine sugars, oil and egg whites. Beat with a wooden spoon until well blended. Add flours, oat bran, baking soda, cinnamon and allspice or nutmeg; stir just until well moistened. Stir in shredded apples. Pour batter into prepared pan. Bake in a 350 degree oven for 25-30 minutes. Cool. If desired, sift powdered sugar on top of cake. Makes 16 servings.
