Use medium size mixing glass. Add 2 or 3 lumps of ice. Stir in 1 tablespoon sugar. Add the juice of 1 lemon, or to taste. Add 2 dashes Absinthe stirred into 1 tablespoon bottled or filtered water.

Stir in the white of 1 egg, then a jigger of gin or whiskey.

Shake in a cocktail shaker filled with ice; strain into a large punch glass to halfway mark. Fill with seltzer and drink while still effervescing.
