CHRISTMAS MORNING APPLESAUCE-RAISIN BISCUITS | |
2 c. all-purpose flour 3 tsp. baking powder 1/4 tsp. baking soda 1 stick butter 1/2 c. raisins 1/2 c. applesauce 1/4 c. sour cream 1/2 tsp. cinnamon 1-1/2 tsp. sugar 1/2 c. confectioners' sugar 3 tsp. hot coffee Preheat oven to 400°F. In large bowl, combine flour, baking powder and baking soda. Mix until well blended. With fork, blend in the butter into pea-sized pieces. Add raisins to flour mix. Stir applesauce and sour cream together and blend into the mix until dough holds together in a ball. In small bowl, stir together the cinnamon and sugar, sprinkle over the dough ball. Knead once or twice just until cinnamon-sugar is streaked through the dough. Turn dough onto a lightly floured surface. Pat or roll out to about 1/2-inch thick. Cut into 2-inch rounds. Place on cookie sheet. Bake for 15 minutes or until biscuits are slightly brown. Meanwhile, mix powdered sugar with the coffee to make a glaze. Drizzle over the hot biscuits.
