GREEN CHILI & CHEESE 
1 1/2 c. shredded Jack cheese
1 c. shredded mild Cheddar cheese
1 can (4 oz.) green chilies (seeded, pith removed, chopped)
1 c. half & half
3 eggs
1/4 tsp. salt
1/8 tsp. ground cumin
1 cooked pie shell

Sprinkle all Jack cheese and half the Cheddar over the bottom distribute chiles over cheese. Beat half & half into eggs, salt and cumin. Pour into the shell. Bake at 325 degrees for 40 minutes.
