FORTUNE COOKIES 
1/4 c. sifted cake flour
2 tbsp. sugar
1 tbsp. cornstarch
Dash of salt
2 tbsp. cooking oil
1 egg, separated
1 tbsp. water

Stir flour, sugar, cornstarch and salt together. Add cooking oil and egg white; stir until mixture is smooth. Add water; mix thoroughly. Make one cookie at a time. On lightly greased skillet or griddle, pour 1 tablespoon of batter; spread to 3 1/2" circle. Cook over low heat until lightly browned, about 4 minutes. Turn with spatula; cook 1 minute more. Working quickly, place cookie on pot holder; put fortune in center. Fold in half, then fold again over edge of bowl. Place cookies in muffin tin to cool. Makes 8.
