FABULOUS SPINACH CASSEROLE 
4 (10 oz.) pkgs. frozen chopped spinach
2 cans cream of mushroom soup
1 can water chestnuts, sliced
1 c. Hellmann's mayonnaise (it is the best mayonnaise I've used)
1 c. sour cream
Juice of 1 lemon
1 med. onion, sliced
1/4 to 1/2 lb. fresh mushrooms
Seasoned croutons
Butter

Chop onions, slice mushrooms and saute in butter until tender. Cook spinach as directed. Drain well. Mix with soup and lemon juice. Add sauteed onions and mushrooms to spinach mixture. Mix sour cream and mayonnaise together with sliced water chestnuts. Put layer of spinach mixture in casserole dish. Add sour cream/mayonnaise layer. Top with spinach layer. Sprinkle with crushed seasoned croutons. Bake 35 to 40 minutes in 350 degree oven. Serves 8 to 10. Use large casserole dish or pan. Enjoy! (Even spinach haters love this dish!)
