TWICE BAKED POTATOES 
4 med. potatoes
1/2 c. sour cream or milk
2 tbsp. butter
2 tbsp. chives
1/4 tsp. salt
Dash pepper
1/2 c. grated cheddar cheese
2 tbsp. bacon bits

Wash potatoes and pierce side with fork. Arrange potatoes on paper towel in a circle at least 1/2-inch between each potato. Microwave 12-14 minutes. Wrap in foil and let stand 5 minutes. Cut away top of each potato and scoop out inside. Be careful not to break shell.

Mash potatoes; add sour cream, butter, chives, salt and pepper. Beat until fluffy. Spoon into potato shells. Microwave on HIGH 3-4 minutes. Sprinkle with cheese and bacon bits. Microwave for another 1 to 1 1/2 minutes until cheese begins to melt. Yield: 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
