CURRY RICE AND CHICKEN SALAD 
2 chicken breasts
1 c. rice
1/4 c. minced onion
2 tbsp. oil
1 tbsp. vinegar
1 tsp. salt
1 tbsp. sugar
1 tsp. curry

Cook chicken in salt water. Boil rice in 2 cups water until tender. Mix with above ingredients and refrigerate overnight. Add 1 cup diced celery, 1/4 cup green pepper, 1/4 cup mayonnaise. Add salt and pepper to taste. You can mix 1/4 cup raisins, pecans or walnuts or water chestnuts.
