SHRIMP SAUCE SALAD 
Juice of 2 lemons
1/2 c. grated onion
1/2 c. grated celery
1/2 tsp. Tabasco sauce
1 tbsp. Chablis wine
2 tbsp. pimiento, chopped
2 tbsp. parsley, chopped
1 c. mayonnaise

Blend or mix all the ingredients together.

Per Serving (2 tbsp.) : Cal 100; Pro.22 gm; CHO 1.5 gm; Fat 10 gm; Chol 4 mg; Sodium 80 mg.

Diabetic Exchanges: Fat - 2.

Serve over peeled boiled shrimp on lettuce bed or cut a cucumber in half lengthwise and hollow out the center; put in shrimp and sauce together.
