CHEESE-SAUCED TUNA SALAD | |
6 slices bacon 1 (12 1/2 oz.) can tuna, drained & flaked 1 (11 3/4 oz.) carton deli cole slaw 1/8 tsp. white pepper 4 lg. tomatoes 2 tbsp. butter 2 tbsp. all-purpose flour 2 tsp. dry minced onion 1/8 tsp. dry mustard 1/4 tsp. salt 1 c. milk 3/4 c. (3 oz.) shredded sharp cheddar cheese Paprika Parsley (opt.) Place bacon on a rack in a 12"x8"x2" baking dish; cover with paper towels. Microwave at HIGH for 4 to 6 minutes or until bacon is crisp. Drain bacon; crumble and set aside. Combine tuna, cole slaw and pepper; stir well. Core tomatoes, cut to, but not through, the base of each tomato. Place on individual salad plates. Spread wedges slightly apart and fill each tomato with tuna mixture. Place butter in a 2 cup glass measure; microwave at HIGH for 45 seconds or until melted. Add flour and next 3 ingredients; stir well. Microwave at HIGH for 1 to 1 1/2 minutes; stir well. Add milk; microwave at HIGH for 2 1/2 to 3 minutes until thickened, stirring at 1 minute intervals. Add cheese, stirring until melted. Spoon cheese sauce over each tuna salad. Top with bacon; sprinkle with paprika. Garnish with parsley, if desired. Yield: 4 servings. |
