LEMON HERB GRILLED CHICKEN WITH
VEGETABLE KEBABS
 
2 to 2 1/2 lb. chicken pieces
3/4 c. vegetable oil
3/4 c. lemon juice
2 tsp. Durkee seasoned salt
2 tsp. Durkee paprika
2 tsp. Durkee sweet basil
2 tsp. Durkee thyme
1/2 tsp. Durkee garlic powder
Zucchini, mushrooms, peppers, tomatoes

Place chicken in heavy plastic bag. Combine remaining ingredients except vegetables; pour over chicken. Seal bag. Marinate in refrigerator several hours or overnight.

Make vegetable kebabs by threading 1 inch chunks of chicken and vegetables on skewers. Broil or grill chicken and vegetables 4 inches from heat source for 5 to 8 minutes per side for vegetables and 15 to 20 minutes per side for chicken or until done. Baste often with marinade.

This recipe has been a favorite in my family (minus the Durkee references) for years after finding it in a Southern church cookbook. It always gets raves and it is easy as you often have everything on hand. I keep frozen lemon juice in my freezer just for this recipe. it seems to go over well with kids and adults alike. I don't always do the veggies and I like it best if it has several hours to marinate. The leftovers are great too!
