TATER TOT CHICKEN POT PIE 
4 chicken thighs (grilled or cooked)
2 green onions, chopped
1 tbsp. olive oil
1 can cream of mushroom soup
1 can mixed vegetables (frozen if preferred)
1 cup milk (I use 2%)
1 bag tater tots
1 bag grated cheese of your choice (I use pizza blend)

Grill chicken thighs, debone and chop into chunks, and set aside. In a pan, slightly brown your green onions in a tablespoon of olive oil. Add can of cream of mushroom soup, can of mixed vegetables, and 1 cup of milk. Cook until sauce reaches a gentle boil. Add chopped chicken and toss to coat with sauce mixture. Pour sauce into a 8x13-inch pan, sprinkle tater tots over the sauce mixture, and spread them out evenly. Sprinkle cheese over the top of the casserole, and bake at 350°F until bubbling (approximately 25 minutes).
