SHRIMP SCAMPI | |
1-2 lbs. lg. shrimp, depending on number serving 1/2 c. butter 1/2 c. olive oil 1/4 c. minced onion 1 tbsp. minced garlic 1/2 c. dry, white wine 2 tbsp. lemon juice 4 tbsp. chopped parsley (fresh, if available) (if using dried, reduce quantity) Salt & pepper 1. Remove shrimp from shells and devein. 2. Rinse shrimp in cold water and pat dry. 3. Heat oil and butter in large skillet (medium heat). 4. Saute onions and garlic until translucent. 5. Add wine, lemon juice and parsley. 6. Add shrimp and cook for 5 minutes. 7. Remove to oven proof platter, broil until tops brown. Serve over rice. |
