SHRIMP SCAMPI | |
3/4 lb. med.-sized fresh shrimp 4 garlic cloves 6 scallions 1 fresh lemon (2 tsp. juice + rest sliced for garnish) 1 tsp. olive oil 2 tsp. Worcestershire sauce 1/4 c. white wine 1/8 tsp. red pepper Dash of parsley flakes 4 tbsp. butter (Rice or linguine) Prepare shrimp. Cut up scallions and mince garlic. In mixing bowl add garlic, scallions, 2 teaspoons lemon juice, Worcestershire sauce, white wine, red pepper and parsley. Stir. At low heat melt butter. Stir in contents of mixing bowl. Increase heat to medium and stir occasionally until mixture bubbles (approximately 5 minutes). Add shrimp to pan and stir occasionally until shrimp turn pink (3 minutes maximum). Remove from heat. Place shrimp over rice or pasta and spoon sauce over top. Garnish with lemon slices. |
