CREOLE JAMBALAYA 
1 tbsp. fat
2 tbsp. flour
1 lb. ham, cubed
3/4 c. chopped green pepper
3 c. cooked shrimp
5 c. diced tomatoes
2 1/2 c. water
2 lg. onions, sliced
1 clove garlic, minced
1 sprig parsley, chopped
2 c. uncooked rice
Pepper

Into a saucepan place fat. Add flour, cubed ham and chopped green pepper. Cook, stirring constantly for 5 minutes. Add shrimp, tomatoes, parsley, garlic, onion and water. Bring to a boil; add rice, pressing into the liquid. Cover and simmer for 30 minutes. Serves 12.
