B Q SHREDDED (BEEF AND PORK) | |
3 lbs. meat, roast 1 lg. onion 1 stalk celery 1 green pepper 2 garlic cloves 1 tsp. salt 1 bottle ketchup 1/4 tsp. garlic salt 2 tbsp. brown sugar 2 tbsp. vinegar 1 tbsp. allspice 1 tsp. dry mustard 1/2 tsp. chile powder 2-3 drops Tabasco 1 bay leaf 1/4 tsp. paprika Put roast, onion, celery, green pepper, clove garlic, bay leaf in kettle and boil 4 hours. Remove roast from broth and shred. Some 1 1/2 cups liquid broth, stir in rest of ingredients (salt, ketchup, brown sugar, vinegar, allspice, mustard, chili, Tabasco, paprika), stir in roast. Cook uncovered for 1 hour. Add water as needed. Serve on toasted buns. |
