CRANBERRY NUT BREAD | |
2 c. all-purpose flour 1 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/4 c. butter 1 egg 1 tbsp. grated orange rind 3/4 c. orange juice 1 1/2 c. golden raisins 1 1/2 c. chopped cranberries 1 c. chopped walnuts or pecans 1. In a large bowl, sift together flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture is crumbly. 2. Stir together egg, orange rind and orange juice. Blend into flour mixture. Stir just until flour is moistened. Fold in raisins, cranberries and nuts. 3. Spoon mixture into a greased 9 1/2 x 5 1/4 inch loaf pan. 4. Bake at 350 degrees for 60 to 75 minutes or until tester inserted in center comes out clean. 5. Cool in pan 5 minutes. Invert onto wire rack. Turn right side up. Cool. Store, well wrapped, for 24 hours before slicing. |
