SWEET POTATO PIE 
1 pie crust
1 1/2 c. mashed sweet potatoes
2 tbsp. butter, melted
1/2 c. brown sugar
1/2 tsp. salt
1/2 c. coconut (opt.)
2 eggs, beaten
1 3/4 c. milk
1 tsp. cinnamon (opt.)
1 tsp. ginger (opt.)

Combine all ingredients; pour into pastry shell. Bake in very hot oven, 450 degrees for 10 minutes. Reduce temperature to 350 degrees and bake 45 minutes longer.
