EGGPLANT PATTIES 
2 c. eggplant (boiled)
1/2 c. bread crumbs
1/4 c. flour
1 tsp. baking powder
1 egg
Salt and pepper to taste

Peel eggplant, cut into pieces, boil in small amount of salted water until tender. Drain thoroughly and mash. Add bread crumbs, flour, baking powder, egg, salt and pepper. Drop heaping tablespoon of mixture into greased pan and fry, brown lightly on both sides.
