SAUSAGE - BEEF CASSEROLE | |
6 sweet Italian sausages, about 1 lb. 1 lb. lean beef chuck, cut in 1 inch pieces 1 onion, sliced 2 med. cloves garlic, minced 2 med. green peppers, seeded & cut in eighths 4 med. potatoes, peeled & cut in quarters 1 can or more red kidney beans, drained 1 tsp. basil 1/2 tsp. salt 1/4 tsp. pepper 2 bouillon cubes, dissolved in 1 c. boiling water In heavy skillet brown sausages well. Cut each link in about 2 inch pieces and place in 2 1/2 or 3 quart casserole. Drain fat from skillet, reserving 3 tablespoons. Brown beef in 1 tablespoon fat and put in casserole. Cook onion, garlic and peppers in remaining fat and cook until tender. Place in casserole with potatoes and beans. Add seasonings and mix lightly. Add bouillon, cover and bake at 350 degrees until beef and potatoes are tender, about 1 1/2 hours. Good with warm crusty bread, green salad and beer or red wine. Serves 6. |
