FLAKY PIE CRUST | |
3 c. flour 1 tsp. salt 1 tsp. vinegar 1 1/3 c. vegetable shortening or 1 c. lard 1 egg 5 tbsp. cold water Cut fat into flour and salt. Beat egg, vinegar and cold water. Sprinkle 1 tablespoon of water mixture over part of flour mixture. Gently toss with fork; push to one side of bowl. Sprinkle next tablespoon of water over dry part; mix lightly; push to moistened part of side. Repeat until all is moistened. Gather up with fingers; form into ball. Divide dough evenly into three parts. Form each into ball. Flatten ball slightly and roll 1/8" thick on lightly floured surface. If edges split push together. Always roll from center out to edge. Use light strokes. For pre-baked pie crust bake in preheated oven at 450 degrees for ten minutes or until lightly browned. |
