PEPPER STEAK 
3 lb. beef tenderloin, sliced then cut into 2-inch cubes
4 tbsp. (1/2 stick) butter
salt, garlic salt, and pepper
1 tsp. oregano
1 lb. fresh mushrooms
3 green peppers, cut into slices
3 tomatoes, quartered
1/4 c. tomato paste
1/4 c. sherry

Brown meat in butter. Add seasonings to taste. Add remaining ingredients, then sherry last. Simmer 20 minutes.

Serves 8.
