QUICK CHOCOLATE COOKIES 
1 (3 oz.). pkg. instant chocolate pudding mix
1 cup Bisquick baking mix
1/4 cup vegetable oil
1 egg
3 tbsp. milk
1/2 cup coconut flakes
1/2 tsp. orange extract

Combine pudding and Bisquick. Add oil and egg; stir. Mix in milk, coconut and extract. Roll into teaspoonful balls; place on cookie sheet and slightly flatten.

Bake at 375°F for 10 to 12 minutes. Sprinkle tops with sugar, if desired.

Yield: 20 cookies.

These are really very good, and are easy and quick to make. My batter was too wet to roll into balls, so I just dropped teaspoonfuls on the sheet, making 20 cookies. That worked very well. Next time I may reduce the milk to 1 or 2 tablespoons rather than 3 tablespoons. That should firm up the batter. Or perhaps the batter could go into the fridge before forming the balls.
