CURRY CHICKEN SALAD 
1 1/2 c. cooked rice
1/4 c. minced onion
1 tsp. curry powder
2 tbsp. salad oil
1 tbsp. vinegar
2 c. chilled, diced chicken
2 c. chopped celery
1/4 c. diced green pepper
3/4 c. mayonnaise
1/4 tsp. salt
Dash pepper

Mix together the rice, chicken, onion, curry powder, salad oil, and vinegar. Chill thoroughly. Just before serving, add remaining ingredients, toss lightly. Serves 6 to 8. Serve in tomato aspic rings, tomato cups, or on lettuce leaves.
