SOUR CREAM ENCHILADAS WITH
CHICKEN
 
1/2 pt. sour cream
1 can cream of chicken soup
1 bunch green onions, chopped, save 1 c.
1 c. Monterey Jack cheese
1 (4 oz.) can diced chilies
3 double chicken breasts, cooked & cubed
12 flour tortillas
1 c. cheddar cheese

Mix first 4 ingredients. Warm tortillas one at a time in warm skillet to make pliable. put chicken on tortilla, add large spoonfuls of mixture and roll. Line up in 9"x13" pan. Pour rest of mixture on top. Sprinkle with 1 cup of cheddar and 1 cup Jack cheese mixed. Cover with remaining onions. Bake at 350 degrees for 30 minutes.
