CHEESE - ONION PIE 
1 1/2 c. fine cracker crumbs (about 40 crackers)
1/3 c. butter, melted
3 c. thinly sliced onions (3 lg. onions)
2 tbsp. butter
1 c. milk
3 eggs, slightly beaten
1 tsp. salt
1/4 tsp. pepper
8 oz. shredded Cheddar (about 2 c.)

Combine crumbs and melted butter; press evenly into 9 inch pie pan. Brown onions in remaining butter; place in crust. Scald milk; add slowly to beaten eggs, stirring constantly. Add salt, pepper and cheese. Pour mixture over onions. Bake at 350 degrees for 30-40 minutes, until a knife inserted in the center comes out clean. Serves 6-8.
