CHEESE AND ONION PIE | |
10 oz. cheese (1/2 Swiss, 1/2 Swiss grueyre) 2 tbsp. flour 2 lg. onions 4 tbsp. butter 1 tsp. chopped basil 2 lg. tomatoes, sliced 2 lg. eggs 3/4 c. cream Prepare pastry, line a 10 inch pie dish and chill. Grate all cheese and toss with flour. Melt butter, slice onions and saute until golden, about 1/2 hour. Spread about 1/3 cheese over bottom then spread onions over. In butter left in the pan heat tomato slices with chopped basil a minute or 2. Arrange tomato slices over onions. The cover with remaining cheese. Beat eggs with cream and pour over cheese. Bake 35 to 40 minutes until top browns. |
