APPLESAUCE 
8 cooking apples
1/2 c. water or cider
1/2 c. sugar or more or less depending on type of apple

Quarter and core apples without peeling if you are using a food mill or peel if you are not. Place apples and water or cider in a saucepan and cook over low heat stirring frequently until apples are tender. Run cooked apples through a food mill or blender or food processor. Stir in sugar to taste. You may also wish to add spices such as cinnamon. Large quantities may be canned or frozen. Pears may be substituted for the apples.
