MUSTARD RELISH | |
1 head cauliflower 4 to 6 cucumbers, about 4 inches long (cut lengthwise and remove seeds) 1/3 c. salt 4 c. water 3 white onions 2 green peppers 1 red pepper 6 lg. apples (peeled and cored) 2 oz. mustard seeds 8 x. brown sugar 2 pts. white vinegar 1/2 c. flour 2 tbsp. turmeric In food processor: finely chop cauliflower and cucumbers. Add salt and water, soak overnight. Drain. Then place the following in food processor onions, peppers and apples, chop fine. Add to the above in large saucepan the mustard seeds, sugar and 1 pint vinegar. Bring to boil. Add flour, turmeric and 1 pt. vinegar. Bring to boil. Add flour, turmeric and 1 pint vinegar. Cook 20 to 30 minutes. Place in sterilized jars and seal. |
