INDIVIDUAL SHORTCAKES 
2 c. flour
4 tbsp. shortening (butter or lard)
2 1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. sugar
3/4 c. milk

Whisk together the dry ingredients. Cut in the shortening using a pastry blender.

Stir in enough milk, gradually, until the batter forms a coherent mass. Turn out onto a slightly floured board and pat out to 1/3 inch in thickness. Cut with a biscuit cutter dipped in flour, and place 1 piece on top of the other with butter spread in between.

Bake at 400°F for 20 minutes or until lightly golden brown: then split each biscuit and spread with fruit and melted butter.

Serve with cream.
