BROCCOLI & RICE CASSEROLE 
1/4 c. butter
1 c. quick cooking rice
1 can cream of mushroom soup
8 oz. jar sharp cheddar cheese
1/2 c. chopped onion
1 c. water
1/2 tsp. salt
1 pkg. chopped broccoli

Saute onion in butter; add rice and brown with onion 5 minutes. Add salt and water, bring to boil; remove from heat; cover, allowing water to absorb. Cook broccoli. Mix rice, undiluted soup, cheese, broccoli and bake, uncovered at 350 degrees for 30 minutes.
