CANCUN FISH | |
1 med. onion, sliced 2 tbsp. olive oil 1 clove garlic, crushed 1 can (14 1/2 oz.) Italian style stewed tomatoes 3 to 4 tbsp. med. green chili salsa 1 1/2 lb. firm fish (halibut, flounder, haddock) 12 stuffed green olives, halved (optional) Saute onion, oil and garlic. Add stewed tomatoes and salsa. Place fish in baking dish; top with tomato mixture. Bake at 350 degree for 20 minutes or until fish flakes with fork. 4 to 6 servings. |
