ROLLED FLANK STEAK WITH APPLE
STUFFING
 
1 1/2 lb. flank steak, well trimmed
1/2 c. red wine vinegar
2 tbsp. vegetable oil
3/4 c. water
1 recipe apple stuffing

Marinate steak in vinegar for about 2 hours in refrigerator, turning meat over occasionally. Drain and pat dry. Place stuffing on steak and spread to edges.

Roll meat, jelly-roll fashion, and tie with string. Brown in oil in heavy Dutch oven. Pour off fat. Add water; cover and bake at 350°F for 1 1/2 hours or until meat is tender.

Remove string and slice into serving size portions.

Makes 6 servings.
