STUFFED STEAK ROLLS | |
2 lb. boneless sirloin 1/2 lb. pork sausage, cooked 1/4 c. bread crumbs 1 egg 1 tbsp. capers 2 cloves garlic, crushed Salt & freshly ground black pepper to taste 3 tbsp. oil 1/2 c. water 1 tbsp. marjoram 1 med. onion, sliced Have butcher cut steak into paper-thin slices. Flatten steak slices. Meanwhile, remove skin from sausages and break into smaller pieces. Mix with bread crumbs, egg, capers, garlic, salt and pepper. Spread mixture on steak slices, then roll up and fasten with toothpicks. Heat oil in heavy fry pan and add steak rolls. Saute until brown on all sides (3-5 minutes). Drain off oil. Add water, marjoram and onion slices. Cover and simmer for 30 minutes adding water or white wine if pan dries out. Delicious served with fresh vegetables. Serves 4-6. |
