POTATO CHEESE CASSEROLE 
6 lg. potatoes
2 c. sour cream
1 c. cheese, grated
1 stick butter, melted
1 bunch green onion, chopped
2 tsp. salt
Pepper to taste

Boil potatoes, Let cool, remove skins. Grate. Mix melted butter, sour cream, and onions. Add to potatoes. Mix well. Pour into 2 quart casserole dish and sprinkle 1/2 cup additional cheese on top. Let set overnight or at least 6 hours. When ready to serve, bake at 350 degrees for 45 minutes.
