SEAFOOD FRIED RICE | |
2 tbsp. cooking oil 1 1/2 c. onion, sliced 1" long 4 ribs celery, sliced diagonally 1 tbsp. ginger root, chopped 2 cloves garlic, chopped 1 red pepper, diced 4 c. rice, cooked 1/2 c. beef broth 1/2 lb. shrimp, cooked and cut in half 1 c. crab meat, flaked 1/2 pkg. snow peas, cut in strips 2 eggs 2 tbsp. soy sauce Green onions and tops, thinly sliced Heat oil in large skillet over low heat. Add onions, celery, garlic and ginger. Stir and cook 5 to 8 minutes. Add red peppers and cook for 3 minutes. Add rice and broth. Cook for 2 minutes. Add shrimp, crab and snow peas and cook for 2 minutes. Remove from heat. Beat eggs and soy sauce together. Push the rice to one side of the skillet. Return to low heat and add eggs and stir until eggs are set, fold gently into rice. Heat and remove to warm bowl. Sprinkle with green onion tops. |
